Mrs. Field cheese cake brownie cups


Ingredients for cheese cake mixture
Softened butter 3 ounces
Cream cheese 6 ounces
Caster sugar 1/3 cup
Flour 2 tbsp heaped
Vanilla essence 1 tsp
Method for cheese cake mixture
In a bowl mix altogether, beat for 2 minutes and keeps aside,
Ingredients for brownie
Sugar 2 cups
Flour 1 ¼ cup
Salt ¼ tsp
Coco powder 6 tbsp
Eggs 4 beaten
Oil ¾ cup
Vanilla 1 tsp
Method
Mix all the ingredients together in a bowl, beat for 3 minutes, keep aside half cup of brownie batter for topping cream cheese mixture, fill cup cake liners, half full, top with cream cheese mixture on top of the brownie batter, now top with a tsp of brownie batter, bake in a preheated oven 180 degrees for 20 minutes.

Daal amrit sari


Ingredients
Black mash ki daal whole 250 gm
Chana ki daal ½ cup
Ginger chopped 1 tbsp
Garlic chopped 1 tbsp
Water 4 cups
Salt 1 tsp
Chili powder 1 ½ tsp
Ingredients for baghar
Ghee ½ cup
Chopped onion 3 tbsp
Ginger chopped 1 tsp
Garlic chopped 1 tsp
Finely chopped tomato 1
Green chilies chopped 4
Coriander leaves 2 tbsp chopped
Mint leaves 15
Method
Wash and both the lentils for 2 hours, boil 4 cups water add in it soaked lentil with chopped ginger garlic, salt and chili powder, cover and cook till tender but not mushy, remove from fire and give baghar.
Method for baghar
Heat ghee fry chopped onion with ginger garlic paste and chopped tomatoes, fry for 2 to 3 minutes add chopped green chilies pour on top of daal, serve garnish with chopped coriander and mint.

Chui mui kay koftay


Ingredients
Mince ½ kg
Water 1 cup
Coriander seeds 2 tsp
Onion 1 sliced
Salt 1 tsp
Chili powder 1 tsp
Yogurt 2 tbsp
Brown onion 2 tbsp
Allspice 1 tsp
Bread 1 sliced soaked in little milk
Ingredients for gravy
Almonds blanched and grinded 2 tbsp
Onion raw grinded
Coriander powder 1 ½ tsp
Salt 1 tsp
Chili powder 1 ½ tsp
Ginger garlic paste 1 tbsp
Allspice 1 tsp
Yogurt ½ cup
Chopped coriander and green chilies as required for garnishing
Method for koftay
In a pan add mince with 1 cup water, chopped onion, coriander, salt, chili powder, cover and cook till mince tender and water dries, remove, cool and chopperize with 2 tbsp of yogurt, brown onion, bread slice and allspice, mix well, form into smooth balls and fry kofta, keep aside.
Method for gravy
Heat ½ cup oil add 1 raw blended onion with ginger garlic paste, fry for 10 minutes add all dry seasonings with yogurt and almonds paste, fry well add 1 cup water, cook till thick, lastly add koftas, leave it in gravy for 5 minutes, serve garnished with chopped greens.

Oreo muffins


Ingredients
Flour 1 ¾ cup
Baking powder 2 tsp
Salt ½ tsp
Oreo cookies 8 to 10 (break each cookie into 4 pieces)
Sour cream ½ cup
Egg 1
Milk ¾ cup
Caster sugar ½ cup
Melted butter 3 ounces
Vanilla essence 1 tsp
Method
Sieve together flour and baking powder, mix with salt, in a bowl add 1 egg, milk, caster sugar, sour cream, melted butter, beat for 2 minutes, fold in sieved dry ingredients and also fold into broken Oreo cookies, pour batter into cupcake liners kept if muffin tray, bake for 20 minutes on 180 degree C.

Lagni fish


Ingredients
Fish whole 1 to 1 ½ kg
Lemon juice ¼ cup
Salt 1 tsp + ½ tsp
Oil ¼ cup
Curry leaves 20
Fenugreek seeds ½ tsp
Ginger garlic 1 tbsp
Turmeric ½ tsp
Chili powder 1 ½ tsp
Coriander 1 tsp
Cumin 1 tsp roasted and crushed
Allspice 1 tsp
Tomatoes 2 finely chopperized
Black pepper ½ tsp
Yogurt ½ cup
Tamarind pulp 2 tbsp
Coriander leaves 2 tbsp
Green chilies 2 chopped
Method
Give cuts on both sides of fish, wash and dry very well, marinate with 1 tsp of salt and 1.4 cup lemon juice, leave it for 30 minutes, heat ¼ cup oil add curry leaves, fenugreek seeds, ginger garlic paste, all the dry seasonings with chopperized tomatoes, add yogurt and fry well, remove. Add tamarind pulp, green chilies, coriander leaves chopped, take a large rectangular piece of foil, put on oven tray, spread with half cooked masala, put fish on it, top with remaining masala on fish, seal well, bake in a preheated oven for 30 minutes, open foil, re-bake till water dries and oil comes on top, serve with lemon slices, chopped coriander leaves.

Hot butter Caramel espresso


Ingredients:
1 tbsp brown sugar
1 tsp softened butter
1 cup hot water
1 cup milk
4 tbsp caramel syrup
3 tbsp coffee matte
2 tbsp white chocolate chips
1 tbsp coffee
Method:
Heat milk, choco chips, butter for 5 mins
Put in a blender with coffee matte, coffee, caramel syrup. Blend well
Serve in mugs with a a swirl of fresh cream

Handi achaari chops


Ingredients
Mutton chops 1 kg
Tomato 250 gm chopped
Onion 1 large chopped
Ginger garlic 2 tbsp
Onion seeds ½ tsp heaped
Cumin roasted and crushed 1 ½ tsp
Coriander seeds roasted and crushed 1 tsp
Lemon juice 2 tbsp
Green chilies 6 whole
Anise seeds 1 ½ tsp roasted and coarsely ground
Kasori methi 1 tsp
Fenugreek seeds ¼ tsp
Oil ½ cup
Salt 1 ½ tsp
Chili powder 2 tsp
Turmeric ½ tsp
Method
Coarsely crushed together anise seeds, cumin seeds, coriander seeds, onion seeds and fenugreek seeds, heat ½ cup oil add chopped onion fry for 5 minutes, add ginger garlic paste, add chopperized tomatoes with salt, chili powder and turmeric, fry well, add in par boiled chops with half cup water, cover and cook till chops nearly done, add in all the coarsely crushed seeds with lemon juice and green chilies, leave it on dum till oil comes on top.

White chocolate chips cookie


Ingredients
Butter 5 ounces 125 gm
Brown sugar 5 ounces
Egg 1
Self raising flour 7 ounces
Salt ¼ tsp
White chocolate chips ¾ cup
Walnuts ½ cup crushed
Method
Beat butter, gradually adding in brown sugar, beat till light and fluffy, add salt and 1 egg, beat for 3 to 4 minutes add self raising flour, beat for 1 minute, stop beater, fold in white chocolate chips and walnuts, mix slightly, scoop cookies with cookie scoop on a butter paper lined cookie sheet, put cookies on interval leaving space between them bake for 15 minutes until done.

Mini chapli burger


Ingredients
Mince double machined ½ kg
Salt 1 tsp
Ginger garlic 1 tsp heaped
White cumin roasted and crushed 1 tsp
Coarsely crushed pomegranate seeds 1 tsp
Crushed red pepper 1 tsp
Allspice 1 tsp
Coriander seeds roasted and crushed 1 tsp
Wheat flour 2 tbsp heaped
Onion finely chopped ½ cup
Coriander leaves 2 tbsp finely chopped
Green chilies 3 finely chopped
Mint leaves 8 to 10 chopped
Eggs 2
Tomato 1 cut into tiny cubes
Mini burger buns 1 dozens
Khati methi imli chatni ½ cup
Cucumber 1 cut into slices
Salad leaves as required
Method
Mix all above in bowl mince double machined ½ kg, Salt 1 tsp, Ginger garlic 1 tsp heaped, White cumin roasted and crushed 1 tsp, Coarsely crushed pomegranate seeds 1 tsp, Crushed red pepper 1 tsp, Allspice 1 tsp, Coriander seeds roasted and crushed 1 tsp, Wheat flour 2 tbsp heaped, Onion finely chopped ½ cup, Coriander leaves 2 tbsp finely chopped, Green chilies 3 finely chopped, Mint leaves 8 to 10 chopped, Eggs 2, Tomato 1 cut into tiny cubes and knead very well make into small kababs and shallow fry, cut burger buns into half, heat, put salad leaves, mini chapli kababs, top with chatni, slice of cucumber, cover with burger buns and serve immediately.
