M and M cup cakes



Ingredients
Flour 6 ounces(12tbsp/150g)
Baking powder 1 tsp heaped
Salt ½ tsp
Chocolate chopped 7 ounces(175g)
Unsalted Butter 4 ounce
Caster sugar 6 ounces(150g)
Eggs 2
Vanilla 2 tsp
Mini m and m’s ½ cup
Ingredients for fudge frosting
Chocolate 4 ounces grated(100g)
Icing sugar 1 cup or 200 gm
Cream ½ cup
Unsalted butter 3 tbsp
Corn syrup or golden syrup 1 tsp
Vanilla essence 1 tsp
Mini m and m’s as required
Method
Preheat oven to 180 degree C, sieve together flour, baking powder and salt, keep aside, place chocolate and butter in a large bowl over simmering water, heat until just melted, remove from heat add eggs 1 at a time, mixing well after each addition, add vanilla, gradually add dry ingredients when batter is smooth fold in m and m’s, divide batter between 12 cup cake liners bake for 20 minutes, remove from oven and cool completely.

Method for frosting
Put all the ingredients in a sauce pan Chocolate 4 ounces grated, Icing sugar 1 cup or 200 gm, Cream ½ cup, unsalted butter 3 tbsp, Corn syrup or golden syrup 1 tsp, Vanilla essence 1 tsp
Cook for 1 minute string continuously, remove from heat and cool, beat icing until thick and fluffy, decorate with icing, and top each cup cake with m and m’s.
