Mango Bread



Ingredients:
Flour 1 ¼ cup
Baking soda 1 tsp
Cinnamon powder 1-1/2tsp
Butter 3 ounces
Eggs 2
Sugar ¾ cup
Oil ¼ cup
Mango 1 peeled and chopped
Flaked coconut ¾
Method:
Preheat oven on 180c. line the bottoms and side of a 9/5 inch loaf pan with butter paper. Grease paper seave together flour baking soda and cinnamon. Beat butter until soft. Add I eggs sugar. Beat till fluffy. Add oil. Fold in dry ingredients in then creamed ingredients in 3 batches. Fold in the mangoes. Spread ¾ of the coconut and spread batter in the pan. Sprinkle remaining coconut on the top. Bake for 45 -50 minutes.
